Johnny Di Francesco is the owner of 400 Gradi, a restaurant in Brunswick, Australia. Di Francesco has perhaps one of the most coveted titles in the world: Reigning World Pizza Champion. He crafted a margherita pizza that beat out 600 applicants, and his victory seemingly could never be topped. Except by himself, of course.
When he set out to make a pizza with 99 different kinds of cheese (the most in the world), it still tasted just as amazing as his title-winning pizza. Now I have to look into visiting Brunswick just for a slice…
Johnny started with a blend of 94 cheeses from all around the world. They were melted together to form a base. Then, the cheese was blast-chilled to create a solid block. Di Francesco then used fior di latte on top, along with buffalo mozzarella, goat cheese, ricotta, and shaved raspadura.
